Vegan Medjool Date Pies
Number of Guests
2 cups of nuts (cashews)
1 cup of coconut oil
1 1/2 cups of finely chopped almonds
4 tablespoons of agave syrup
1 cup of date "Medjool"
1/2 cup of wheat bran
Juice of 1 lime
1 cup of strawberries
In your food processor or blender incorporate dates, oats and almonds to form a paste with dense texture, if necessary, use a tablespoon of water or a tablespoon of coconut oil to facilitate the process. Evenly fill the molds with the mixture and let cool.
Back into your food processor or blender, process the strawberries, chestnuts (remove excess liquid), coconut oil and lemon juice, and you have a smooth, dense texture and without lumps incorporate agave syrup (to taste) until a sweet taste.
Finally fill the molds, let cool for 12 hours and serve.
