Baked Apple Cinnamon Stuffed Dates

Ingredients:

½ cup chopped date.
2 tablespoons sherry
Cooking spray
2 tablespoons brown sugar
2 tablespoons walnut
1 teaspoon lemon zest
½ teaspoon cinnamon
2 teaspoons butter
4 medium apples cored
1 cup apple juice
Natural Yoghurt to serve

Instructions:
Marinate for 3-4 hours of dates with sherry. Preheat oven to 350 degrees F. Spray the base of a mold with cooking spray. Combining the mixture of dates, sugar, nut, peel, cinnamon and butter in a bowl. With a knife to cut a horizontal surface around each apple prevent skin from tearing during cooking. Arrange apples in pan prepared. Divide the mixture between centers date apples. Pour juice apple apples around. Cover the pan loosely with aluminum. Bake bathing occasionally apples and apple juice for 40 minutes or until apples are tender. Serve with a dollop of yogurt.
