Ingredients:

40g unsalted butter.
1/3 cup brown sugar
ΒΌ cup whole cream
2 pears cut into crescents.
5 dates halved.
1 sheet of puff pastry.

Instructions:
Preheat oven to 200 degrees C. Grease 20cm springform pan (type springform recommended). Cover the base with baking paper. Put butter, sugar and cream in a small saucepan over medium-high heat. Cook, stirring for 5 minutes or until the sugar is dissolved, bring to boil, reduce heat to low. Simmer for 2 minutes or until slightly thickened. Spreading sauce on the mold base. Arrange pears and dates over the sauce. Cut a circle the size of the mold with a slight surplus (1cm) in the pastry. Cover the fruit with the circle of puff pastry, pressing the edges into the mold. Bake for 12-15 minutes until the pastry is puffed and golden brown. Stand for 5 minutes. Carefully flip the cake platter presentation in removing the baking paper. Serve with ice cream.
