225 g cream cheese
115 g crumbled blue cheese
1 cup chopped Medjool dates
6 tbsp minced shallots
1 tsp grated lemon zest
1/4 tsp sea salt
1/4 tsp freshly ground pepper
1/2 cup finely chopped toasted walnuts
In a bowl, beat together the cream cheese and blue cheese on medium speed until smooth. Add the dates, shallots, lemon zest, salt, and pepper and beat until it's combined.
Refrigerate until it solidifies.
Put the walnuts in a bowl.
Remove the cheese ball from the refrigerator. shape into golf ball sized balls and roll it gently in the chopped nuts until all sides are well covered.
It's now ready to be served along with crackers or sliced baguette
