Cake with ice cream filling and Medjool dates

15 Medjool dates
2 tsp of your favorite liquor
Vanilla ice cream
1 large sponge cake
Confectioners sugar for dusting
Soak the chopped Medjool dates in liquor for 30 minutes. Cut the sponge cake in half (lengthwise), so you’re left with equally sized pieces and fit them in a plastic wrap lined cake pan. Mix the ice cream with the chopped Medjool Dates that were soaking in liquor and add the almonds.
Distribute evenly on top of the sponge cake already in the cake pan and top it with the other piece of sponge cake. Put it in the freezer for a few hours. Take out of the freezer and dust with confectioners sugar and a few dates cut in half.
