Chiles en Nogada

Ingredients:

4 poblano chiles
300g ground beef
30 g ground pork
1 onion
250g diced tomatoes
1 garlic
30g pecan nuts
100g Medjool Dates
100g almonds
250g cream
2 tsp granulated sugar
½ cup milk
1 pomegranate

Instructions:
Sweat the onions in a few teaspoons of oil and salt them. Add the pork, beef and garlic, once they’re cooked, add the tomatoes until the liquid evaporates. season with salt and pepper and incorporate the dates and nuts. Blend the cream with the almonds and a bit of milk, add sugar as necessary to give it the desired level of sweetness.
Grill the chiles until the skin gets burnt, peel it, clean it and seed it. Fill the chiles with the previously cooked filling and cover with the nogada sauce. Garnish with pomegranate seeds.
