Medjool Date sweetened Horchata

1 cup long grain white rice
3/4 cup toasted almonds
1 piece of cinnamon stick
5 cups water
10 Medjool Dates, Seeded
1/4 teaspoon vanilla
This recipe is pretty easy.
First you take the rice and grind it until it’s really smooth and even, same for the almonds (you might need a few tablespoons of rice to make it easier to grind, they contain a bit of oil, be patient. And lastly, do the same with the cinnamon.
Take the seeded dates and soak them in 2 cups of water overnight, the same goes with the rice, almond and cinnamon mixture with the remaining 3 cups or water.
In the morning blend all of these in until really smooth (2-3 minutes). And pass it through a sieve.
Serve very cold
